This coffee cake is easy, delicious, and perfect for any occasion! Made using our Gluten-Free Vegan Pancake & Waffle Mix, it’s soft, cinnamon-swirled, and topped with a sweet glaze. Let’s get baking!
Ingredients
For the Cake:
• 1 bag Mama Alana’s Pantry Gluten-Free Vegan Pancake & Waffle Mix
• 3 tbsp vegetable shortening, melted
• 3 tsp vanilla extract
• 3 tbsp apple cider vinegar
• 4 tbsp sugar
• 1 cup milk of your choice (we recommend oat milk)
For the Cinnamon Swirl:
• ¾ cup sugar
• 3 tbsp reserved Pancake & Waffle Mix
• 6 tsp cinnamon
• 3 tbsp butter or vegan butter, softened
For the Glaze:
• 3 cups powdered sugar
• 1 tsp vanilla extract
• Milk of your choice (just enough for desired consistency)
Directions
1. Prepare the Baking Mix:
• Open the Pancake & Waffle Mix and remove 3 tablespoons of the mix. Set it aside for the cinnamon swirl.
• Place the remaining mix in a large bowl. Add melted vegetable shortening, vanilla, apple cider vinegar, sugar, and milk. Mix until smooth and combined.
2. Make the Cinnamon Swirl:
• In a separate bowl, combine the reserved 3 tablespoons of Pancake & Waffle Mix, sugar, cinnamon, and softened butter. Mix with a fork until crumbly.
3. Layer the Coffee Cake:
• Grease or butter an 11x9-inch baking pan. Spread just over half of the batter into the pan, smoothing it out.
• Sprinkle a layer of the cinnamon mixture over the batter.
• Scoop the remaining batter on top, spreading it as best as you can (it’s okay if there are gaps!).
• Top with the remaining cinnamon mixture.
4. Bake:
• Bake at 350°F for 25–30 minutes. Check for doneness by inserting a toothpick; it should come out clean.
5. Make the Glaze:
• While the coffee cake is baking, mix powdered sugar, vanilla, and milk in a bowl until you reach your desired consistency.
6. Finish & Serve:
• Once the coffee cake is done baking, let it cool for a few minutes. Drizzle the glaze over the top or serve it on the side.
