Mama’s Gluten-Free Vegan Sweet Cherry Pie

Mama Alana's Gluten-Free Vegan Sweet Cherry Pie isn't just any old dessert—it's like a warm hug from grandma, but in pie form! - For the Pie Crust:
 - 2 in 1 Mama Alana’s Pantry Gluten-Free Vegan Pie Crust
- For the Filling:
 - 4 and 1/2 cups halved & quartered pitted fresh cherries
 - 1 1/2 cups granulated sugar
 - 1/4 cup tapioca starch
 - 1 tablespoon lemon juice
 - 1 teaspoon pure vanilla extract
 - 1/4 teaspoon almond extract
 - 1/4 cup melted vegan butter
-  1/2 - 1 tsp coarse sugar for sprinkling on crust


1. Prepare the Pie Crust:

 - Make the dough according to the instructions for Mama Alana’s Pantry Gluten-Free Vegan Pie Crust.

  - Place the dough in the fridge covered while preparing the filling.

2. Make the Filling:

 - In a large bowl, mix together the cherries, granulated sugar, tapioca starch, lemon juice, vanilla extract, and almond extract until well combined. 

  1. Assemble the Pie:

   - Preheat the oven to 400°F (200°C). Place one rack in the middle of the oven and another rack below it.

   - Line a cookie sheet with parchment paper and place it on the lower rack to catch any spills from the pie.

   - Roll out the bottom pie dough and place it into a glass pie dish. Crimp the edges to seal, ensuring there are no holes in the crust.

   - Scoop the cherry filling into the prepared pie crust. Then pour the juice from the mixture in the pie only until it gets to half way up the cherries. You can discard or simmer the rest into extra sauce.

   - Roll out the top crust and place it over the filling. Crimp the edges to seal, and make a few X's on top of the pie to allow steam to escape.


  1. Bake the Pie:

   - Brush the melted vegan butter over the top crust.

   - Sprinkle coarse sugar over the buttered crust.

   - Place the pie on the middle rack of the oven and bake for 20 minutes.

   - After 20 minutes, reduce the oven temperature to 375°F (190°C) and continue baking for an additional 30-40 minutes, or until the crust is golden brown and the filling is bubbling.

5. Serve and Enjoy:
  - Allow the pie to cool before slicing.
  - Serve with your favorite vegan ice cream or whipped topping.
