Vegan Chickpea Pot Pie Recipe

And don't worry if you're not vegan or vegetarian – you can easily substitute real chicken and chicken broth for a traditional twist.

Ingredients:

- 1 Mama Alana’s Pantry 2 Pie Crust in 1 Gluten-Free & Vegan (Prepare mix and put in fridge)

- 4 tablespoons unsalted vegan butter

- 1 can chickpeas, drained and rinsed

- 1/2 cup sliced carrots

- 1/2 cup sliced celery

- 1/4 cup chopped yellow onion

- 1/2 teaspoons salt

- 1 teaspoon fresh rosemary, sage and thyme minced -if not fresh use 1/2 tsp dried 

- 1/4 teaspoon ground black pepper

- 1/4 cup cornstarch

- 2 1/2 cups vegan chicken broth (or use real chicken broth if preferred)

- 1/2 cup frozen peas

- 1/2 cup frozen green beans

- 1/2 cup diced potatoes

 

Instructions:

  1. Make sure there is an oven rack on the bottom rack of the oven. Preheat oven to 425 degrees F.
  2. Add the butter to a large skillet over medium heat. Once melted, add carrots, celery, onion, potatoes, salt, and pepper. Cook for 8-10 minutes, stirring often.
  3. Add cornstarch and stir well until no cornstarch remains. Slowly add the vegan chicken broth (or real chicken broth). Cook until bubbling and thickened, stirring often, for about 3-4 minutes.
  4. Remove from heat and stir in peas, green beans, chickpeas, and herbs. Let cool for 15-30 minutes before filling the pie crust.
  5. Fit one pie crust into a 9-inch pie plate. Spoon the cooled filling into the pie crust. Top with the second pie crust. Seal the edges of the pie crust together and cut 2-4 slits in the top crust to allow steam to escape.
  6. Place the filled pie plate on a baking sheet and bake for 35 minutes on the bottom rack of the oven.
  7. Allow the pie to cool for 15-30 minutes before slicing and serving.
